No Bake Strawberry Soufflé - A Unique Dessert That Isn't Your Traditional Soufflé.

Summer is here, and with that comes a dessert fit for the sunny days.

This variation of Strawberry Soufflé isn't the one you might be accustomed to as this one involves no baking, no eggs and no added sugar. Very quick and easy to make, it's a recipe that I learned from my mom, and you only need 4 ingredients to make it. 

The end result is a yummy and delightful dessert which has just the right amount of sweetness to cater for your tastebuds. Perfect to make for summer bbq parties. 🍓🍨
We usually made this style of soufflé with pineapple, but turns out, finding pineapple jelly in UK stores is a challenge in itself. Ah well, guess I will have to order them online and come back again to make pineapple soufflé next time. However you can make any other flavoured ones as long as yiu swap the fruits and jelly for whatever other flavour you desire. 
Here's the recipe: 

No Bake Strawberry Soufflé:

Ingredients:

- 1 tinned strawberries in syrup (around 350 to 400gms). 
- 125 ml extra thick cream. 
- 350ml evaporated milk. 
- around 140gms strawberry jelly powder or crystals (more or less around this weight). 

- Fresh strawberries (for topping). 
- Whipped cream (for topping). 

Preparation:

- Separate the tinned strawberries from the syrup and set aside. We will add the syrup to make the jelly.

- Prepare the jelly according to package instructions but use half of the water that's instructed and add the strawberry syrup in the jelly mixture. Mix it all well together until it is well incorporated. Set it aside in a bowl and let it cool at room temperature. We want the jelly mixture to remain at room temperature and not solidify it. 

- In a large mixing bowl, add in the evaporated milk and cream. Mix it with a mixer or whisk for about 2 to 3 mins until it is well incorporated. 

- Next add in the tinned strawberries into the bowl and with a hand blender, blend it all together until the strawberries are all blended in. 

- Lastly add in the jelly mixture (which should be at room temperature), and mix it with a mixer until everything is well incorporated. 

- Transfer the whole mixture into a dessert bowl and refrigerate it in the fridge for at least 4 to 5 hours until the whole mixture solidifies. You are looking for a jelly like consistency. 

- Take it out of the fridge afterwards and top / dress it with fresh strawberries and cream however you desire.
